Sunday Dinner

So I've decided every Monday I am going to post my favorite recipes from the previous week.  I would like to first remind everyone that a recipe is not a permanent list of ingrendients and procedures.  You should always mold a recipe to fit your taste and if it doesnt work after you try to redefine it THEN throw it out.

Last night I made "shrimp scampi" or at least thats what the original recipe I was following was called.  My hubby LOVED it.

-1 lb shrimp
-angel hair pasta
-1 T olive oil
-2 T chopped olives
-2 T chopped parsley
-2 cloves garlic (minced)
-2 C chopped baby spinach
-1 C halved cherry tomatoes
-1/4 C milk
-1/2 C chicken broth
-1/2 C white wine
-parmesan cheese (optional)

Get the milk, broth, and wine boiling.  Add garlic, olives, and spinach and leave to simmer.  Boil water and cook pasta as directed on the package.  Prepare shrimp as desired (I sauteed mine with the olive oil and some garlic).  Toss everything together, add cherry tomatoes, sprinkle with parmesan and enjoy!

Now we didn't use a whole pound of shrimp (good lord theres only 2 of us and I personally think a pound of shrimp in pasta is a ridiculous amount for just 2).  Play with seasonings and quatities.  Find what you like.  Think of a recipe as a skeleton as you have to fill in the rest of the body with what you think should be there.

Making things from scratch is not that hard people.  I bake all of our bread, make *most* of our dinners from scratch, and I still have time to maintain 4 physical therapy apointments a week along with hours upon hours of volunteering.  No I do not have a 9 to 5 job.  No I do not have children.  But I was brought up to not be a sissy about taking care of my own.  Just do it.  Home cookin is good stuff maynard ;)

They're Still My 'Boys

Happy Sunday Everyone!

The past couple days have not been typical.  My husband came home from the field (yay!) and surprised me with tickets to the Cowboys/Chargers football game.  My first ever live pro football game and for those that don't know me I'm a HUGE Cowboys fan.

Seeing it all go down live is so exciting!  I love baseball as well and I've been to my fair share of life pro baseball games but the atmosphere is so different in football.  Everyones adrenaline is pumping and most everyone takes the game much more seriously.  Long story short my 'Boys lost but it was a good game.  A very good game for me.

Everyone knows stadium food isn't exactly the healthiest food around (if you don't know this I'm sorry you missed the memo...) and I give into it every time.  Last night, however, I did not eat one ounce or drink one drop of anything but water at the game.  I stayed true to my Herbalife diet and came home to eat some chicken breast and salad.  It was amazing.

Even more amazing when waking up and seeing I've lost 5 pounds since thursday.  FIVE POUNDS FOLKS!  I feel awesome too.  Now I know there's at least one negative nancy out there who is thinking "well it's not healthy to lose more than 2.2 pounds a week blah blah blah...." but let's think about me for a second.  I am a big girl.  I have lots of water weight going on.  At this point I don't care if it's 1 ounce or 15 pounds a week, I need it GONE. 

So yes, this post was all about losing.  I lost something and my team lost something.  I'm still me and they're still my 'Boys.

A History Lesson

Hello all and welcome!  I am Nicci and this is a blog of my life journey in all aspects.  I am married into the military (Oorah ;) ), have been for a little over a year, we have a little pug named Gordo (who I will talk about A LOT because he is basically my child), and I am overweight.  This is also the first time I have been away from my family for this long and at such a distance.  My husband and our best friend peer pressured me into playing xbox a few years ago and I play more than they do now.  I'm a gaming nerd and my husband loves it haha.

My husband and I have been married for 1 year and together for almost 5.  He gave me my little black pug Gordo for my birthday a year ago.  Gordo has the most personality and so far he makes a pretty good substitute for littles.  He is also the perfect example of the toddler I never want ha.  On that note we are most definitely hopeful for children soon...ish.  There are complications.  I was pre-diagnosed with PCOS and we should hopefully find out soon for sure.  It's very difficult to think I may not be able to actually conceive.  This of course can be helped by losing weight.  Which is what I would like to focus on.

Recently a new friend came into my life and introduced me to Herbalife.  Today is day one of that journey.  I have tried diet after diet after diet but in the end I find I have no will power whatsoever.  I LOVE cooking and baking.  This does not mean I'm a short order cook...I definitely cook on my own terms and time.  I hope to find and share new HEALTHY recipes and finally kick this weight to the curb.

This girl likes to be funny.  I like to have a good time and absolutely dislike buzzkills, debbie downers, and negative nancys.  There is absolutely no reason you have to be so mean and down about everything in this life.  Expect posts of joy, venting, and a lot of cooking as I try to figure this stuff out.  Hopefully everyone has a wonderful Friday and weekend.
